Tasty Toastie: Smoked Cheese, Sweet Onion Chutney and Red Onion

Double onion, we hear you say? But that’s the key to this tasty lunchtime treat. The sweetness of the chutney is complemented by the crispness in texture and flavour of the fresh red onion.

This recipe is the perfect way to showcase the superb taste of our sourdough bread in a quick and easy autumnal lunch.

 
 

How to make it

 

Slice your Breadwinners sourdough (we used the classic white ciabatta) thickly and spread both sides with butter or margarine (for a vegan option). On one of the slices, spread a thick layer of sweet red onion chutney. On top, place slices of smoked cheese – we actually used Applewood’s vegan smoked cheese, but check out London’s markets to find great independent cheese makers.

Top the cheese with thin slices of red onion – not too much, not too little! – before popping on the top slice of bread.

Carefully transfer your sandwich, buttered on the outside, to a hot frying pan, or a sandwich maker if you’re fancy. Fry it for a few minutes until crispy and golden before flipping and repeating on the other side. Slice and enjoy!
