Breadwinners' Recipes: Breadwinners’ mentor gets creative with her lunchtime toastie

Everyone who volunteers at Breadwinners is obviously really passionate about food. We’re always on the lookout for interesting takes on classic recipes and this week’s Breadwinners’ recipe is no exception!

If you love a toastie (like we do) but are a bit fed up with the same old cheese toastie, we’re here to help! Our fantastic volunteer and mentor, Caroline, got creative with her Breadwinners’ online delivery and made a spinach and ricotta sourdough toastie with apricot harissa, red onions and parmesan cheese. She shared this incredible toastie recipe with us and we just couldn’t wait to share it with you all! 

If you want to recreate this, you’ll need:

4 slices of your Breadwinners’ sourdough loaf

Handful of spinach, washed and teared

Ricotta cheese

2 teaspoons of apricot harissa

Half a red onion, diced

1 crushed garlic clove

Parmesan cheese, grated

Olive oil

Salt and pepper

Butter

Method:

Fry your red onion in a frying pan with the crushed garlic for two minutes until soft. 

In a bowl, mix your spinach, ricotta, parmesan, fried onion with some salt and pepper until it’s all combined.

Butter one side of each slice of bread and spread the mixture evenly over the unbuttered side of two slices of bread. Top with the remaining bread.

Now it’s time to get toasting! Place your sandwiches in the frying pan and fry until the cheese is all melted and the sourdough is golden brown.

You can either spread your harissa on your bread before frying or use it as a tasty dip!
