Breadwinners' Recipes: Feta and Watermelon Bruschetta

Here’s a twist on a traditional Iranian dish that is usually served for breakfast and lunch, although some people eat it for dinner as well.
How NOON`O PANIR`O HENDOONEH (Feta and watermelon with flatbread) was invented or came about is unknown but I used to enjoy this as a child with a cup of tea - which makes it even better.
I decided to recreate this with our Breadwinners baguette.
The mixture of the ingredients in this meal is amazing. We have feta which tastes a bit salty and sour. On the other hand, we add watermelon which tastes sweet and watery. All the ingredients have their natural flavour and when they come together, they create a unique flavour.
The interesting thing about this meal is that it is made with fresh ingredients, which means you don’t have to cook! So, it’s easy to prepare - it’s kind of fast food but healthy!
The other feature of this meal is its appearance. It is so colourful that anyone wants to give it a try! We have a base of brown bread and on top, the red and white colour of watermelon and feta cheese, gives it a pop!
